汉族的清饮
 
汉民族的饮茶方式，大致有品茶、喝茶和吃茶之分，只是古人饮茶重在“品”；近代饮茶多为“喝”；至于“吃” ，则为数不多，区域不广。大抵说来，重在意境，以鉴别茶叶香气、滋味和欣赏茶汤、茶姿为目的，自娱自乐者， 谓之“品”。凡品茶者，得细品缓啜，“三口方知真味，三番才能动心”。若以清凉解渴为目的，大碗急饮者；或 不断冲泡，连饮带咽者，谓之“喝”。倘若连茶带水一起咀嚼咽下，当然是“吃”了。在曹雪芹《红楼梦》第四十 一回“贾宝玉品茶栊翠庵”中，妙玉借用了当时的流行俗语：“一杯为品，二杯即是解渴的蠢物，三杯便是饮驴了 。”此话可谓一语中的，维妙维肖地道出了饮茶的方法之分。但汉族饮茶，虽方法有别，却大都推崇清饮，认为清 茶最能保持茶的“纯粹”，体会茶的“本色”，其基本方法就是直接用开水冲泡或熬煮茶叶，无需在茶汤中加入食 糖、牛奶、薄荷、柠檬等其他饮料和食品，为纯茶原汁本味饮法。主要茶品有绿茶、花茶、乌龙茶、白茶等。而最 有代表性的饮用方式，要数啜乌龙、品龙井、吃早茶和喝大碗茶了。
